The 8 at Grand Lisboa Hotel teams up with Le Palais Chinese Restaurant at Palais de Chine Hotel for an exquisite culinary collaboration
[Macau, 8th March, 2019] – The 8 at Grand Lisboa Hotel and Le Palais Chinese Restaurant at Palais de Chine Hotel jointly set a new record in the history of Michelin through an event to be hosted by two Michelin 3-Star Chinese restaurants. A press conference was held successfully at Palais de Chine Hotel on 7 March, inviting more than 60 media to witness this legendary moment. During the press conference, Chef Joseph Tse presented the “Stewed Rice with Abalone and Chicken” during the cooking demonstration, which is one of the dishes that he specially designed for this exquisite culinary collaboration. Afterwards, Chef Joseph Tse from The 8, Chef Matt Chen and Chef Ken Chan from Le Palais Chinese Restaurant also presented souvenirs that symbolise the cultural exchange between two restaurants from different districts.
The 8 at Grand Lisboa Hotel is Macau’s only restaurant to have received the Michelin 3-Star Award for six consecutive years. Led by Executive Chef Joseph Tse, the Michelin 3-Star culinary team has come to Taiwan for a collaboration with Le Palais Chinese Restaurant. This is the first time in history that a Chinese feast by two top Michelin-star restaurants will be presented. From March 8 to 9, 2019, the “2019 Legendary Feast” will be held at Le Palais Chinese Restaurant, a joint creation of three Michelin-star chefs, Executive Chef Joseph Tse of The 8 at Grand Lisboa Hotel and the two Executive Chefs, Matt Chen and Ken Chan, of Le Palais Chinese Restaurant. A total of 10 dishes will be presented in the Michelin-star lunch and dinner feast. The set meals are priced at NT$12,800*. The feast has made a breakthrough by extending the experience exchange to the service aspect. Led by Mr. Kenneth Lai, Director of Grand Lisboa Hotel, and the Service Manager of The 8 will share their experiences with the service team of Le Palais Chinese Restaurant on how to achieve the meticulous Michelin 3-Star service. Moreover, during the event period, each guest who joins the feast will experience the prestigious services provided by the Michelin 3-Star restaurants.

Executive Chef Joseph Tse of The 8 at Grand Lisboa Hotel brings a series of top-class dishes to the “2019 Legendary Feast”. The Pan-Sealed Scallop with Kaffir Lime and Chilled Snow Crabmeat with Cherry Tomato are made with selected fresh and sweet-tasting Japanese scallops with lime honey juice. The sealed scallops are crispy and taste truly delicious. King Crab, which also has a fresh and sweet taste, is paired with greenhouse-grown small eggplant as well as ginger vinegar. The combination of the two creates a tasty appetiser. The Crispy Beef or Pork with Homemade Cream is the signature dish of The 8. It features premium US Angus Beef Ribs that are simmered with a variety of ingredients for six hours to help reduce the odor of the beef and make the meat tender. Dip the beef in flour mixture then fry until a golden yellow colour for a crisp crust and tender inside. Enjoy the beef together with a mix of Chenpi (seasoned citrus peel) and salted lemon cream sauce. The chef has particularly chosen 10-year-old Chenpi, which has a sweet and mellow taste, to pair with the cream to neutralise the greasy texture of the beef. The dish is served with lotus root, which represents the flower symbol of Macau – “Lotus”, and osmanthus sugar poured on top and with the combination of different mutually complementing ingredients. In addition, this dish is presented with really thoughtful plating. The number “8” implies auspiciousness as well as represents The 8. Stewed Rice with Abalone and Chicken is made with Taiwan’s select Penglai rice that looks crystal clear and with a soft and chewy texture. The chef added the abalone juice during the process of cooking the rice, coating each grain of rice with the sweet juice. It is paired with whole top-class abalone, a precious ingredient that creates good colour, flavour and taste for the dish.

This year, Le Palais Chinese Restaurant invited The 8 at Grand Lisboa Hotel, which is also a Michelin 3-Star restaurant and led by an Executive Chef with more than 50 years of culinary experience and knowledge, for an experience exchange and collaboration in Taiwan with the Executive Chefs of Le Palais Chinese Restaurant to jointly demonstrate the history and culture of Cantonese cuisine.
An Experienced Executive Chef from The 8
The 8’s Executive Chef is Joseph Tse who has over 50 years of experience working in hotel restaurants. Tse started his training in the culinary arts in 1969 and has served as head chef in some of the world’s top five-star hotels. After six years at Sheraton Imperial Kuala Lumpur Hotel, a time of considerable learning for Tse, he went on to serve as Chinese Executive Chef for the Aberdeen Marina Club, managed by Shangri-La Hotel group, for five years, a period during which he continued to refine his mastery of the culinary arts. In 2007, Tse moved to Mandarin Oriental, Hong Kong as their Chinese Executive Chef, before working as the Chinese Executive Chef of Hotel ICON for nine years. In 2015, Tse was invited by Grand Lisboa Hotel to be The 8’s Executive Chef. Joseph Tse’s culinary skills and deep understanding of Chinese cuisine have made him a well-known name in the industry.
He has received numerous certificates and accolades, and has also served as chief instructor of southern Chinese cuisine at the Hong Kong Chinese Cuisine Training Institute.
